While Sugar Spells Baking specializes in custom sugar cookies, my dad’s been encouraging me to add Czech-style kolaches to my menu. Well, I’m happy to say that I now offer homemade kolaches in Portland, Oregon!

My Great-Great Grandparents

A Family Tradition

My dad grew up eating homemade kolaches in Central Texas. His great-grandparents immigrated from Czechoslovakia & his grandmother often made kolaches for their family. Her kolaches were often made with a traditional poppy seed or prune filling.

When we moved to Portland, Oregon, my dad missed kolaches. He couldn’t find any kolaches near us, so we set out to make them ourselves.

After much trial and error, my dad said I had the recipe and techniques down. We’ve been making them at home for years.

I’ve added a few tweaks to my Great-Great-Grandmother’s recipe & I hope you enjoy them!

What is a Kolache?

In Czech, a kolache (koláč in Czech, plural koláče) is a sweet pastry made from a yeast dough, typically filled with fruit, poppy seeds, or a sweet cheese (tvaroh). The name “kolache” originates from the Czech word “kolo,” meaning “circle” or “wheel,” referring to the pastry’s traditional round shape.

Kolache is a pastry that was brought over to rural Texas by Czech settlers during the mid- to late-1800s. Kolaches are readily available at many family bakeries in Texas.

What do Kolaches taste like?

Kolaches are a yeasted dough that is a bit sweet, filled with ample amounts of filling, and topped with a delicious and buttery streusel-style topping called posypka, žmolenka, or drobenka. They’re filling, sweet but not too sweet, and they’re the perfect snack at any time of day.

How do I get a Kolache?

I will offer a bi-weekly kolache preorder. Kolache pickup will be at 9 AM & 10 AM on Saturday mornings at my home in Cedar Mill. The preorder will be on my website, and you can choose your pickup date and time at checkout.

What kind of Kolaches will you offer?

All kinds! I plan to focus on traditional Czech-style kolache fillings, but I also want to offer seasonal fillings. My first preorder will have 4 filling options – blackberry, blueberry, marionberry & strawberry. All the fillings are made fresh in my home from berries my family and I have handpicked.

This fall, I’d love to offer pumpkin, apple, pear, and plum fillings. I’m excited for all the flavor possibilities.
